As a special treat to usher in the holiday season, we here at Fuller & Fuller thought it might be nice to share a little something extra with you. To help combat the winter weather and keep you and your family full and happy at the same time, we offer up a recipe from our very own paralegal and amazing chef, Carman. Enjoy!

Holidays are all about entertaining. This year I came up with a recipe that is light on the wallet but still delicious!

Glazed Pork Loin

4 to 5 lb Pork Loin
1/2 cup honey
2 Tablespoons Sugar (Brown or White)
2 Tablespoons Stone Ground Mustard (but honey Dijon would be good too)
2 Tablespoons Molasses or Maple Syrup
1 teaspoon thyme or more if fresh
1 Tablespoon Fresh Ground Pepper

Pat dry the pork loin with a paper towel. Season with salt and garlic powder. Score the loin about 1/2 inch deep, in one inch sections all the way down the loin. Set the loin to the side. In a bowl combine the following to make a glaze: honey, sugar, mustard, molasses or maple syrup, thyme and ground pepper. Rub 1/2 of the glaze over the top of the loin. Roast in a 350 degree oven for 30 minutes. After 30 minutes, flip the pork loin over and pour the remaining glaze over the loin. Roast another 30 minutes or until done. If you want, flip the loin back over and place under the broiler for a few minutes to crisp up the top.

***Before placing the loin in the roasting pan, line the pan with aluminum foil and add a little water to keep the glaze from burning.
